All of the food I had in DC was amazing, but there is something so reassuring about being home and knowing every ingredient that goes into your food. Cooking at home I’m not worried about sugar hiding in sauces because I chose them or make them. I don’t have to worry about making the waiters job harder because I’m modifying my food. While it can be time consuming it’s simple, easy and ultimately less stressful. 
Tonight while I caught up on homework Alex made an amazing keto and vegetarian spin on Chicken Parm bake. Wide cut Zoodles, Keto Spaghetti sauce, fake chicken nuggets and lots and lots of cheese. It was so yummy and warm to combat the freezing temps outside. Plus we have lots for leftovers, so I’m excited about lunch tomorrow.

"Let's make cookies!" they said. Guess what, they ended up playing Superheroes and left mummy to do all the work 😏They did fly by to comment that the cookie dough smelled delicious though, and wasted no time in sampling the biggest pieces from the cooling rack. There is nothing worse, when your trying soooo hard to keep your diet in check but your silly head just keeps telling you how much you NEED treats!!!! All right all right all right... So, zuchinni brownies did not really deliver in my opinion. 🤷🏻‍♀️ My husband band daughters like them, but I find them really sweet. And not a good sweet either. Maybe that just the coconut sugar. But!! If you want to give them a try, here is the recipe.

1/3 cup coconut oil
1 1/4 cup dark chocolate
2 large eggs
3/4 cup coconut sugar
1/4 cup grated and dried zuchinni/courgette (about 1 small one, peeled, pressed with kitchen roll to get all the water out)
2 tbsp cocoa powder
3 tbsp arrow root powder (or corn starch)
🥒
In a microwave safe bowl, or in a bowl on top of a pot of boiling water, melt coconut oil and chocolate together till combined. Transfer to a medium bowl and add eggs, sugar, and zuchinni. Mix well then add cocoa powder and arrow root powder. Mix thoroughly until combined. Spread into a 8x8 pan that has been lined with parchment paper. Bake at 350°F or 175°C for 25 minutes or until toothpick comes out clean. Mine took around 30 minutes.

TOFU! 
I’ve had a bit of a hard time loving tofu. But when you marinate it well it becomes something else. 
I boiled 1 tablespoon of honey, plenty of soy sauce, chili flakes and some oil (I used sesame oil). Pour over the tofu and Put it in the oven at 200 degrees until it’s starting to look crispy. I added Renèe Voltaire’s sesame seed mix on top. Deeeelish!

TOFU! I’ve had a bit of a hard time loving tofu. But when you marinate it well it becomes something else. I boiled 1 tablespoon of honey, plenty of soy sauce, chili flakes and some oil (I used sesame oil). Pour over the tofu and Put it in the oven at 200 degrees until it’s starting to look crispy. Lunch today is sharp sharp veggie fried rice with carrot and cucumber fingers to munch on, indulge yogurt and water.
 The rice is from leftover white rice from Sunday and it contains, egg, shredded chicken, veggies and tumeric.
Kobi loves carrot and cucumber just like mummy😄. I snack on fruits and veggies a lot and since he likes eating whatever mummy eats,  he got stuck on them too. So, eating healthy for your kids starts from  you Mama! .

Cauliflower buffalo bites!! Super easy and cheap!! All you need is a bag of frozen cauliflower (like $1.00) some type of hot sauce ($3.00) and dressing ($2.00) you just boil the cauliflower, strain it, put it in a pan cover in hot sauce, and bake it for 25 minutes! Super easy! I use blue cheese yogurt dressing ! The whole bag of cauliflower (this whole plate) and dressing- is only 150 calories total! Easy, yummy, cheap, and guilt free! Gary is watching the Steelers game so I made a little game time snack! He’s also making some buffalo chicken dip- but that’s not a healthy recipe at all! Although it is delicious!
