There is really nothing like a good stack of pancakes in the morning, especially when they are healthy, filling, and easy to make 💁🏼‍♀️ these babies are layered with strawberries 🍓, pecans, hemp seeds, and cacao sauce.

2 tbsp cacao powder
1 tbsp maple syrup
1 tsp coconut oil
Almond milk or water to desired thickness

#currynight at my house today. This chicken bhuna is delicately spiced using @pataksuk madras curry paste (it a lifesaver when I need to make a #curryinahurry). I ate mine with 2tbs of brown rice and veg and salad. Curries don’t have to be swimming in oil and they don’t also need a long time to cook. Prepare everything in advanced and you can actually make this curry in less than 30 mins. 
Ingredients:
2 chicken breasts cut into large cubes, seasoned and dusted with 1 tsp plain four and 1/2 tsp of curry paste. 
2 garlic cloves grated 
1 tsp ginger grated 
1 small onion thinly sliced 
2 tsp curry paste 
Seasoning (if needed)
10 cherry tomatoes cut in half
2 chillies split and seeds removed (optional)
1 tbs coriander for garnishing
1.5 tbs oil for cooking 
Method: 
1. in a pan on medium heat add oil and cook the marinated chicken pieces, about a minute each side so each side is golden and a little crispy. You may need to cook them in batches. Take out and Put to one side.
2. In the same pan add garlic and onion and sauté for 1 minute, add 2 tbs of curry paste and keep stirring for 1 min 
3. Add onions and keep stirring for 3 mins add the chicken back into the pan and keep stir frying for 7 mins on medium to high heat. 
4. Add tomatoes and keep stirring for 1 min, if it needs additional seasoning at this point add it. 
5. Coriander and chillies to garnish 
6. Serve with rice, salad and steamed veg.

Okay so full disclosure I *technically* used two sheet pans to make all this.  It’s a little easier to roast the potatoes on their own. But holy smokes this is a delicious and easy meal. 🍽

I ordered the Rawson greens smoothie which is kale, spinach, mango, coconut milk, agave, banana, and a super green shot. I changed the coconut milk for coconut water 🥥. It was very yummy. .

When I make my menu and grocery list for the week, I try to follow a similar format for each week to make it easier. For example: Monday night - chicken. ( chicken cutlets, chicken wraps, chicken on the bone) Tuesday night- fish ( salmon, tilapia, tuna).Wednesday night- chopped meat( hamburgers, meatballs, meat sauce, tacos)Thursday night- pizza( pizza wraps, pizza bagels, pizza bread, pizza pita). This way, I have my menu made but I’ll make variations each week. We were in the mood for Chinese style chicken so I just cut this chicken into cubes and added soy sauce, honey, corn starch and hot pepper flakes. This Buddha Bowl with cashew sauce really hit the spot last night! It’s loaded with vitamins & minerals & is high in protein w/ a tiny bit of healthy carbs! It was pretty easy to make & my kids even loved it! 
Cashew Sauce Ingredients: 
1/2 cup cashew sauce, 2 tbsp low sodium soy sauce or tamari, 2 tbsp lime juice, 2 tbsp maple syrup, 2 tsp minced garlic, 1 tsp minced ginger, pinch of the red pepper flakes & 1 tbsp warm water. 
Bowl Ingredients: 1 large sweet potato peeled & cut into cubes, 1 large red beet peeled & cut into cubes, 1 spaghettti squash cut in half, 1/2 cup chopped cilantro, 4 large eggs, 3 cups chopped kale, 2 tbsp olive oil, 1/4 tsp sea salt & 1 can chickpeas rinsed & drained. 
Directions:
Preheat oven to 375 degrees. Remove the seeds from the squash and brush with olive oil. Bake the squash on a foil lined baking sheet for 45 minutes. Next, place the sweet potatoes & beet cubes on a foil lined baking sheet & drizzle with olive oil & season with sea salt. Bake at 375 degrees for 30 minutes or until tender. Meanwhile, place all sauce ingredients in a food processor & blend until smooth. Set aside. Next, fry the eggs & set aside. Add 1 tbsp olive oil to a pan & sauté the kale until slightly wilted. Set aside. Once the squash, sweet potatoes & beets have slightly cooked, start to assemble the bowls. Distribute the squash, chickpeas, potatoes, beets, spinach, egg & cilantro amongst the bowls. Drizzle with cashew sauce & enjoy!! 🍽

Couldn’t resist. Just had another amazing meal at Flower Child. Indian spiced cauliflower with turmeric, date & almond, roasted butternut squash with black kale, toasted mulberry, maple chestnut vinaigrette and organic, non-GMO tofu. Omg. Can’t wait to go back!  The people working there are lovely, too, which is an added bonus. Oh, and their kombucha is off the charts!

Two things, I hate matching my socks & these chocolate chip protein cookies are EVERYTHING. I can’t stop eating them y’all. Good thing they are FULL of nutrition. .

I LOVE remaking sweets we all love to still be healthy & taste awesome. Be sure to make a bit more than a few, they’ll be gone quick! .

Be sure to set the oven on 350 cook for 8-10 mins before they get brown on the edges pull them out. To be sure they’re done, stick a knife or toothpick in the cookies. Take them out to cool then enjoy! Add some almond butter on top for some added fun & yum. .
